Espresso Foam

After trying all of the organic milk available in Jackson Hole, the generic organic skim from Smith's makes the best foam for espresso. I wish a local farm, such as Reed's Dairy in Idaho Falls won the contest, but it was not even close. Smith's grows the cows to produce a silky foam when steamed.
